I don't really have advice for you, because my first thought is that if you still feel jerked around and overwhelmed after nearly two months, then maybe it would be a good idea to quit, except it's not easy for anyone to find a new job these days. So quitting might not be a good idea.
Either way, that office sounds like a bizarre and stressful place to work, especially since it seems like there's no one there taking you seriously. I would be freaked out, too. I guess at this point go to your two month meeting, bring up your concerns again, and see how that goes? It might be too much to hope for a different outcome, but since the meeting is already scheduled you don't lose anything by trying again.
